The problem with using other regions was that most of them simply don't have a map we can use, and many others also cannot be reconciled (such as ones of a full planet). I think I found only a single GCR with a map that could fit on our planet. And the issue then is that we have now defined out solar system and its celestial bodies, which would have to be reconciled with other region's settings. I investigated this a while back and it just simply wasn't practical.
I believe the unofficial canon me and Kringle use (maybe a few others, can't remember) is that other than the ice caps there are no other major landmasses on Pacifica besides those in the South Pacific and B&N. Still plenty of islands of various sizes (think the actual Pacific, just on a global scale), but no continents. This lets us have a rest of the planet while giving an easy lampshading for issues like why we don't contact/colonize the rest of the world.
I made a rough sample map at one point, but its a little too big and tends to crash everything it touches.
