Is the theme overhaul more of a technical process or one of design?

I think the easiest answer to that question is "Yes", though for now it's rather the former (which is why it's not been brought up so much yet)

May I please be granted access to the control panel of NewPoints to play around with it?

Is it possible to define the width of individual columns in tables?

Is it possible to change the colour of tables (and boxes)?

Can one prevent images in tables from being automatically resized when other cells grow due to long rows of text?

At the moment - no, this is not possible, and I don't see (at first glance) a plugin that allows better tables like this.

We could probably expand the table definitions to allow more things along those lines. Do you have a specific syntax in mind?

Perhaps something like this? https://community.mybb.com/thread-76446.html

It would be nice to control table and individual column width using amount of pixels. Looking something like this:

Code:
[table=150px][tr][td=100px]1[/td][td=30px]2[/td][/tr][tr][td]3[/td][td]4[/td][/tr][/table]

I guess one problem to handle could be over-constraining the widths, like if the sum of all column widths is greater than the that of the table Happywide
