Neither of these are purely classical per se, but I would recommend either of these instrumental, Renaissance-esque renditions of Greensleeeves, or Alessandro Moreschi's (i.e., the last famous Castrati, and the only one to make high-quality, solo recordings) rendition of Ave Maria.
